Travel buddy cook up number 18, Banana Bread. I have been thinking about this one for a long time now. I tried it a couple of times at home to test the recipe, before having a go on the road. It was day one of our SA Mystery Tour, after a good night at the Yunta Coopers Hotel, it was an early start to the day to get this bread mixed and in the oven before we departed on this 7 day tour. After a couple of interruptions and questions on what was happening the bread came together pretty well and it wasn't long before it was in the oven. We mucked around for about half an hour before leaving and then another half an hour to get to Waukaringa an old former gold mining town, it was here that I rolled the bread over to brown the top. I have used this trick quite a few times when doing any sorts of breads or damper in the Travel Buddy. It was approx another half an hour to our roadside lookout where we pulled the bread out and had an good hearty feed while taking in the 360 deg views of the area.

*Remember its not perfect, compared to the way you cook at home in your own oven, but it's all happening while your driving and saving you time when you arrive at your destination or for your lunch stop on the road. Keep trying different foods and times and see what works for you and your family.

Pre heat oven for 30 mins if you want to, Prep time 10mins , cooking time approx 1-1.5 Hrs, Cook for an hour, then remove and roll over to cook the top to a golden crust.

Ingredients:
• 2 cups self-raising flour
• 1 tsp of bicarb soda
• 1 tsp of ground cinnamon
• ½ cup caster sugar
• ½ cup milk (reduced fat if you prefer)
• 2 eggs
• 1 cup mashed banana (approx 2 large bananas, more is an option)
• Pinch of Salt
Optional extras:
• ¾ cup sultanas or chopped dates
• ¾ cup choc chips (white, milk or dark your choice)
• ½ cup desiccated coconut
• ½ cup finely chopped nuts (pecan, walnut your choice)

Method:
1. Preheat oven to 180°C. Line the base and sides of a 23cm x 13cm loaf or bread pan with non-stick baking paper.
2. Sift flour, bicarbonate of soda, salt and cinnamon into a large bowl. Stir in sugar and optional extra if required.
3. Combine eggs, milk and bananas in a large jug. Whisk with a fork, until well combined. Using a large metal spoon, stir egg mixture into dry ingredients, until well combined.
4. Pour mixture into prepared loaf pan. Bake for 40-45 minutes, or until a skewer inserted in the centre comes out clean.
5. Cool in pan for 10 minutes. Turn onto a wire rack to cool completely. Slice and serve lightly buttered, or toasted.
6. Serve warm/toasted or at room temperature with butter.
