Western Odisha famous Letha/ Ambila(ଲେ ଥା) : Letha is a traditional dish of western Odisha.This is a well known dish specially prepared by people of kuilta community. Every special occasion we definitely make this.its a mouthwatering dish once you eat never forget the taste.Basically its a soupy type not very thick consistency,a unique flavour of spicy and sour taste. Prepared with vegetables, kardi (Bamboo shoot ) and dried mango or tamarind.Is there anyone who dont like Letha ??(specially sambalpuria).

Cooking time-15 min
serve with rice

Ingredients:
Pumpkin-1 piece
brinjal-2
radish-1
tomato-2
ladyfinger-2
ivy gourd-3
raw tamarind-1
kardi/bamboo shoot
some coriander leaves
some curry leaves
For rice paste:
soaked rice -5to 6 tsp
garlic-3
green chilli-1
some coriander leaves
for tadka:
panch futan-2 tsp
hingh / asafoetida -1 pinch
red chilli - 2
some curry leaves
kashmiri red chilli powder-half tsp
turmeric powder-1 tsp
salt to taste
