A crispy paratha topped with a spiced paneer mixture, melted cheese, and a refreshing salad tossed in dahi chutney 😍
Ingredients
For the Paneer Mixture:
• 200g paneer, crumbled
• 2–3 green chillies, finely chopped
• 1/2 tbsp ginger garlic paste
• 1 tsp cumin powder
• 1 tsp coriander powder
• 1/2 tsp amchoor powder
• 1/4 cup cheese (any melting cheese)
• Salt, to taste
• Pepper, to taste
• 1 tbsp yogurt
For the Salad:
• 1/2 cup salad leaves
• 1/2 cucumber, thinly sliced or julienned
• 1/4 beetroot, thinly sliced or julienned
• 1/4 onion, thinly sliced
• 2 tbsp dahi chutney (yogurt mixed with green chutney)
• 1 tbsp lime juice
• 1 tsp chaat masala
• Salt, to taste
• Pepper, to taste
• 1 paratha
• Oil
Method
1. In a bowl, combine crumbled paneer, green chillies, ginger garlic paste, cumin powder, coriander powder, amchoor powder, salt, and pepper.
2. Add yogurt to the paneer mixture and mix until lightly bound together.
3. Heat a pan and lightly toast the paratha on one side.
4. Flip the paratha, spread the paneer mixture evenly on the toasted side, and cook on low heat until the base is crispy and golden.
5. Sprinkle cheese over the paneer mixture, cover the pan with a lid, and let the cheese melt.
6. In another bowl, mix the dahi chutney with cucumber, beetroot, onion, salad leaves, lime juice, salt, pepper, and chaat masala. Toss well.
7. Place the cheesy paneer paratha on a surface, paneer-side up.
8. Layer it with fresh salad leaves followed by a generous scoop of the dahi-chutney salad mix.
9. Sprinkle chaat masala on top, roll it up tightly, and serve warm.
