Non-fried Dahi Vada --TASTE THE BEST AT HOME

Ingredients
Dehusked Split Black Gram 3/4 cup
Dehusked Split Green Gram 1/4 cup
Ginger 1” piece
Cilantro 7-8 sprigs
Salt to taste
Asafoetida 1/2 tsp
Yogurt 2 cups
Sugar 1/4 cup
Oil 2 tbsp
Tamarind sauce to taste
Red Chilli powder to taste
Roasted cumin seed powder 1 tsp

सामग्री
धुली उरद दाल 3/4 कप
धुली मूँग दाल 1/4 कप
अदरक 1” टुकड़ा
हरा धनिया 7-8 तने
नमक स्वादानुसार
हींग 1/2 छोटा चम्मच
दही 2 कप
चीनी 1/4 कप
तेल 2 बड़ा चम्मच
इमली की चटनी
लाल मिर्च पाउडर स्वादानुसार
भुना ज़ीरा पाउडर 1 छोटा चम्मच

Split green gram makes the dahi vadas soft on the stomach.
Mixing of batter should be done in one direction only for proper aeration.
Vadas should be fried twice so that they turn out crisp & hold their shape even after being soaked in water.
Vadas should be soaked in hot salty water for complete 30 minutes.
Do not squeeze out all the water from the vadas else they turn hard.
Let the squeezed vadas soak in yogurt mixture for about 30 minutes before serving.
