Recipe :
7 Egg Recipes for Breakfast
1. Egg Appe
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
1 cup idli batter
½ cup rava
2 eggs
1 tsp baking powder
Salt to taste
oil as needed
1 tsp chilli flakes
1 tsp mustard seeds
2 tbsp finely chopped onion
2 tbsp chopped tomatoes
2 tbsp chopped carrots
2 tbsp finely chopped coriander leaves
Method:
Mix rava, eggs, chopped vegetables, salt, baking powder in idli batter.
Add tsp of oil in appa cavity, a few mustard seeds, chili flakes and pour 2 tbsp batter over it. Cover and cook till firm. Turn appa to cook golden from both sides. Serve.

2. Masala Egg Toast
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
6 bread slices
2 eggs
2 tbsp milk
2 tbsp finely chopped onion
2 tbsp chopped tomatoes
2 tbsp chopped carrots
2 tbsp finely chopped coriander leaves
2 tsp finely chopped green chilies
Red chili flakes
Method:
Break eggs in a bowl. Add remaining ingredients and mix . Dip bread slices in batter and cook on medium hot tawa from both sides till done. Serve.

3. Egg Rolls
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 2
Ingredients:
2 Eggs per paratha
Dough for paratha
2 tbsp finely chopped onion
2 tbsp chopped tomatoes
2 tbsp finely chopped coriander leaves
2 tsp finely chopped green chilies
Green chutney
Red chili chutney
Sliced onions
2 Cheese slices per paratha
Method:
Break balls of dough. Roll out into parathas.
Cook parathas on both sides.
Meanwhile break eggs in a bowl and add vegetables, salt to taste.
Add egg mixture on pan and cover with paratha. Cook till egg is well done. Remove to a plate. Spread green chutney over the egg side. Place cheese slices over it. Spread red chili chutney over it. Add sliced onions and roll. Serve.

4. Egg Paratha
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 2
Ingredients:
2 Eggs
Dough for paratha
2 tbsp finely chopped onion
2 tbsp chopped tomatoes
2 tbsp finely chopped coriander leaves
¼ tsp Turmeric powder
1 tsp Red chili flakes
½ tsp garam masala powder
Salt to taste
Oil as needed
Method:
Roll tennis sized the dough into a large roti.
Break eggs in a bowl and mix all ingredients.
Place roti on the tawa. Pour batter in the center. Fold the sides of roti over batter like an envelope. Cook on both sides over slow heat till tegg is cooked. Add oil and cook till crisp. Serve.

5. Fluffy pancakes
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 2
Ingredients:
2 eggs
1 cup flour
1 tsp Vanilla essence
½ cup Milk
1 tsp Baking powder
3 tbsp Powdered sugar
¼ cup melted butter
Method:
Mix flour and baking powder. Mix eggs, milk, vanilla essence, powdered sugar. Add wet ingredients to dry ingredients and mix. Now mix in melted butter.
Pour ladleful of batter on medium hot pan and cook till golden on both sides. Serve.

Spanish Omelet
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4
Ingredients:
½ cup oil
250g potatoes, thinly sliced
salt and pepper to taste
½ cup onion, thinly sliced
4 large eggs
2 green onions, chopped
Salt to taste
Chili flakes to taste
Method:
Heat oil large pan. Add potatoes cook, stirring occasionally, until lightly golden 10 to 14 minutes. Add onions; cook till translucent.
Strain excess oil out.
Whisk eggs in a bowl; season with salt and pepper. Add onions and potatoes and pour mixture into the pan. Cook over low heat until eggs begin to brown on the bottom.
Flip omelet. Cook until eggs are set.
Serve garnished with chili flakes and green onion.

6. Egg in a basket
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4
Ingredients:
4 Bread Slices
4 Eggs
Chopped spring onions
Red chili flakes
Salt to taste
Butter as required
Method:
Using a cookie cutter, make a round hole in each bread slice. Add butter to the pan.
Place the bread slices. Break open an egg in to each hole. Sprinkle salt to taste, red chili flakes, spring onions. Cover and cook till the egg is lightly firm. Serve.
