Healthy Strawberry Oatmeal Bars

Here's what you'll learn in today's video:

First, I'll show you how to quickly prepare oats, combining wet and dry ingredients, which is the base for this recipe.

Next is the bonus recipe, quick explanation on how to prepare strawberry chia jam. Chia is a great, healthy substitute for gelatin and corn starch, and using a couple of tablespoons of chia seeds will be enough to thicken any fruit jam.

After baking, the bars will need to fully cool before slicing. Using a sharp knife cut into squares or bars.

If you want, you can serve these healthy bars with sour cream, melted white chocolate or extra fresh strawberries on top.

STRAWBERRY OAT CRUMBLE BARS
For the oat crumble:
1 1/2 cup ground oats
1 cup old-fashioned oats
1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup melted butter
1/3 cup honey
1/3 cup Greek yogurt
1/2 tsp vanilla extract

For the filling (strawberry chia jam):
1 pound strawberries, roughly chopped
2 tbsp honey
2 tbsp lemon juice
2 tbsp chia seeds

Preparation:
In a bowl, combine all wet ingredients, melted butter, honey, Greek yogurt and vanilla extract.

In another bowl, combine all dry ingredients, ground oats, old-fashioned oats, baking powder and baking soda.

Incorporate dry ingredients into wet mixture, mix to combine into smooth and thick paste.

For the strawberry chia jam, in a small saucepan add chopped strawberries, honey and lemon juice. Bring to a boil, lower the heat and gently cook for 10 minutes. Using a potato masher mash the part of the strawberries. Stir in chia seeds, mix with the spoon and set aside for 30 minutes.

In a lined baking pan spread 2/3 of the oat mixture. Press well using the back of the spoon or do it with your fingers.

Pour the strawberry chia jam over the oats and spread evenly.

Crumble the remaining oat mixture over the top of the strawberry filling, lightly pushing into the top.

Sprinkle with some old-fashioned oats on the top.

Bake in 350 degrees preheated oven for 20 minutes.

Let it completely cool down, transfer onto a cutting board and cut into the shapes you prefer.
