Roma's Sorrel Fruit Cake | Christmas cake

Sorrel cake is a delicious version of fruit cake that is flavoured with fragrant sorrel (hibiscus petals). This is a celebration cake that is usually enjoyed during the Christmas holidays. In this video, I share how I make this dessert using dry sorrel instead of sorrel purée.

Ingredients:

Sorrel Alcohol

2 packs dried sorrel
750 ml bottle white rum
750 ml bottle sweet red wine or port

Sorrel Fruit Cake

1 ½ cups self rising cake flour
1 ½ cups granulated sugar
½ lb softened butter
6 eggs
½ tsp allspice
½ tsp cinnamon
½ nutmeg
½ tsp ground ginger
1 tsp vanilla
1 tsp almond extract
1 tsp rose water
4 drops red food colouring (optional)
2 cups ground candied fruit soaked in sorrel alcohol
1 cup sorrel alcohol
