Royal Bibingka is made from glutinous rice cake, just like many other Filipino delicacies. It comes with a generous amount of cheese toppings that make it a special snack during the Christmas season. So far, people from Vigan were the known pioneers of the royal bibingka.

Ingredients:
2 cups glutinous rice flour
⅓ cup white sugar
200 ml coconut milk
150 ml condensed milk
200 ml evaporated milk
3 eggs
3 tbsp butter melted
1 cup cheese grated

INSTRUCTIONS

1. Pre-heat the oven at 180 °C for 5 minutes and grease a muffin pan with melted butter.
2. In a large bowl and combine glutinous rice flour, white sugar, coconut milk, condensed milk, and evaporated milk. Use a whisk to mix them all together well.
3. Add the eggs and melted butter. Mix again until well combined. Transfer the mixture into the prepared muffin pan. Bake for 45 minutes.
4. Take the pan out of the oven. Grease the top of each bibingka with melted butter and sprinkle some grated cheese. Bake again in the oven for 5 minutes.

Note: What we made in the video is good for around 10-12 people.
