Hello friends! In this new winter episode, we're embracing all things cozy to find peace and create warmth in our hearts. We'll be decorating our home and baking delightful cookie boxes for holiday gifts. Additionally, my daughter, who is in her second year of learning the piano, and I have prepared something special. Gingerbread Cookies Recipe 🥣
We have been using this recipe for over 10 years!
The dough must be prepared in advance, the day before baking.

Inverted Syrup 🫕
350 g brown sugar
155 ml hot water
2/3 tsp lemon juice 🍋
1/4 tsp baking soda

Dough Ingredients 🥣
250 g unsalted butter 🧈
1+3/4 tbsp brown sugar
3 eggs 🥚
5.5-6 tbsp flour
1/2 tsp baking soda
2 tsp cinnamon
2 tsp cloves
2 tsp ginger
a pinch of nutmeg and cardamom

First, you need to prepare inverted syrup:
Dissolve sugar in hot water. Bring to a boil, then add lemon juice 🍋 . Cover tightly and simmer over low heat in a heavy-bottomed saucepan for 45 minutes. After that, cool the syrup and add a soda solution (dilute the soda with a dessert spoon of water). As soon as the foaming is over, the syrup is ready.

Now let's prepare the dough.
Heat the inverted syrup to a boil and add the butter. Beat eggs with sugar and combine with the remaining warm syrup. Mix well to dissolve the sugar. Add soda, and gradually, pouring through a sieve, stir in the flour. Place the dough in the refrigerator for a day.

Remove the dough to take the required amount for rolling, and put the rest back in the refrigerator. On a surface dusted with flour, roll out a piece of dough into a layer of about 5 mm, cut out the gingerbread cookies, transfer to a prepared baking sheet and bake at 375F (190C) for 7-9 minutes (don't overdry cookies)!
