Sausagemeat stuffing:

Mix one packet of dry sage and onion stuffing according to pack instructions, allow to cool and then mix with 800 g of sausagemeat. Freeze uncooked, allow to defrost on Christmas Eve and then add some dabs of butter or goose fat and put in to a hot oven to cook through and for the top to get nice and crispy, sometimes I add some breadcrumbs to get that really crispy topping.
