Old Fashioned Ham and Pea Soup

1 leftover meaty ham bone

16 ounces dried split peas
3-4 carrots, peeled and sliced
1 medium onion, chopped
3-4 small potatoes, peeled and quartered
2-3 stalks celery, diced
leafy celery leave/tops, chopped
4 cloves garlic, minced
3-4 bay leaves
6 cups water
1 carton chicken stock
salt and pepper to taste
Extra leftover ham as needed.

DIRECTIONS:
In a large dutch oven, add leftover meaty ham bone, dried split peas, carrots, onion, potatoes, celery, leafy celery leaves, and garlic.
Add bay leaves, water and chicken stock. Add salt and pepper to taste.
Stir and cover. Heat to a boil and reduce heat to
medium-low. Simmer for 1-1 1/2 hours. Remove ham bone. Remove ham, chop and return back to soup pot. Add extra leftover ham, chopped, to soup pot if needed. Continue to simmer, uncovered, an additional 30 minutes to 1 hour. Serve.
