SUN-DRIED TOMATO CHICKEN ALFREDO
Cook 8 oz of pasta in salted water
Cut 1lb of boneless, skinless chicken breasts into bite-size chunks.
Season with salt, pepper, garlic powder, onion salt, Italian seasoning, and paprika
Heat 1 TBSP olive oil in a large skillet over medium-high heat. Cook chicken until done and then remove from pan.
Add 4 cloves of minced garlic and 4 diced sun-dried tomatoes. Cook for 30 seconds to 1 minute. Add about 2 cups of heavy cream. Stir and bring to a boil. Once boiling reduce the heat to medium-low and let simmer & thicken for 5 to 10 minutes. Then stir in 1 ½ cups of parmesan cheese. Taste for salt and pepper. Once that has melted add in cooked pasta and chicken.

Add 4 cups pasta, 4 cups water or broth, 1 Tbsp butter, and seasonings of choice to the instant pot. Cook on manual High Pressure for 5 minutes. Then do a quick release. Add milk & cheese to your liking.
