Welcome back to Taco Tuesday Episode 9 - FULL RECIPE BELOW!

Don't let morning breakfast before work, make a banging weekday breakfast taco. This one utilizes some key tips to make sure you are efficient with how you are cooking. Large pan, fresh sausage, eggs, onions and peppers with some hot sauce and a sprinkle of cheese, what's not to love?

-- WEEKDAY BREAKFAST TACO --

- 2 oz loose breakfast sausage
- ⅛ onion, sliced
- ½ anaheim chile, sliced (or bell pepper)
- 2 eggs
- 1 TBSP cotija cheese (or whatever you want)
- 3-4 dashes of hot sauce (I use habanero and smoked ghost pepper sauce from Pex Peppers)
- 1 Flour tortilla (put in microwave for 10 minutes prior)
- 1 TBSP crushed tortilla chips

1. Heat a large cast-iron over medium heat, position one side of the pan over direct heat for cooking.
2. Add the sausage and break it up in the pan cook for 1-2 minutes (meanwhile, you can cut the vegetables)
3. Once the sausage is done, move it to the far edge of the pan, and add the vegetables where the sausage was. Add a small pinch of salt.
4. Brown vegetables for 2 minutes.
5. Push vegetables to the other edge of the pan and crack two eggs where the vegetables were (If you need more oil or butter you can add it)
6. Scramble the eggs in the pan for 1 minute. Add the cheese and hot sauce and stir everything together for 10 seconds.
7. Add the egg mixture to the warmed flour tortilla and add a sprinkle of tortilla chips.
8. Place in the pan and heat both sides until lightly browned and crisp.
9. Add any additional toppings as you please (sour cream, cilantro, tomato, etc.)
