This way of making ginger syrup is pretty easy and nothing groundbreaking, but when you combine 1 oz of ginger juice with 100 grams of a 2:1 rich simple syrup you end up with a ginger syrup that is 50 Brix,

You can make the ginger syrup more intense by adding in more than 1 oz of ginger juice to your 100 ml of ruch simple, just remember that for each additional oz of ginger juice you'll need to add the same amount of granulated sugar to get back to a 50 Brix syrup.

Recipe
Take any amount of ginger and blend with equal parts water. Not need to peel. For every 100 ml of a rich 2:1 simple syrup, add in 1 oz of ginger juice.
