Sausage, Onion and Pepper Bake

3 peppers – mixed colors if you can
1 medium red onion
1 package precooked sausage – I am using double smoked
2 cloves of garlic minced
2 to 3 TBSPS of olive oil
Salt & Pepper
1 TBSP garlic powder
French bread or any bread you like for toast
Parmesan cheese to sprinkle over the top – this is optional

Clean and slice all of the peppers, the onion and the sausage and place them all on the sheet tray. Sprinkle with salt and pepper and 1 tbsp of garlic. Pour on the olive oil and massage everything with your hands until the ingredients are well coated. Put into a preheated 425-degree oven for 35 minutes, stirring half way. We serve this on toast but you could serve this as dinner with rice on the side.

Chicken Thigh and Sweet Potato Bake

6 bone-in ski on chicken thighs
1 large sweet potato peeled and diced into ½ inch to 1 inch dice
About 14 bussell sprouts cleaned and halved
½ pint cherry tomatoes
1 large red onion sliced

For the glaze:
1 TBSP each of Dijon mustard, olive oil and honey. Mix well together and spoon over the chicken.

Place into a preheated 425-degree oven for 30-35 minutes and then remove from the oven. Take the chicken out and stir the veggies. Place the chicken back on. If the chicken looks like its getting to brown add a sheet of foil over the dish before you put it back into the oven. Cook an additional 10 minutes.
