賣麵炎仔 切仔麵の専門店: ミシュランビブグルマンを獲得した切仔麵

大稻埕にお店を構える賣麵炎仔は、オープンから80年以上経過した今年になって初めてミシュランのビブグルマンを獲得するというサプライズが起こりました。三代目の店主、葉海川さんはシンプルながらも懐かしさのある切仔麵を初代のレシピを守って残してきました。今期の《TAIPEI》では、そんな伝統ある切仔麵の裏側にある物語をインタビューしてきました。
