Masoob, the street food that you once tried in, perhaps, Saudi Arabia and fell in love with. Not knowing what it's called or made of, you probably remember it as the 'banana dessert thing'. It's sweet, filling and reasonably priced (much cheaper than your western franchised takeaways).

Masoob, or masoub, is a Yemani dish. Along with many other foods served in Saudi Arabia, masoob is commonly mistaken for being Saudi. There are variations of masoob in almost every Gulf country and over time become part of the traditional 'Saudi' food (if you are having it in Saudi that is).

Whys such a focus on Saudi? Well, that's where I first tasted masoob and have been craving it since. I found a few recipes online and decided to give it a go. The ingredients are not perfect (the bread is supposed to be shredded/ blended into clumps) and this will not match the taste 100% but it's a really quick improvised version!

TIP: When mixing the banana be make sure it doesn't stick to the pan. Keep mixing it. The same goes for the date paste. If you let this stay in one place too long, it will stick to the pan and ruin it!
