Stuffing ke liye:

Ingredients:

Aalu (potatoes): ½ kg
Bareek namak (salt): ½ teaspoon
Lal mirch powder (red chilli powder): 3/4th teaspoon
Zeera powder (cumin powder): ½ teaspoon
Lehsan ki pothi (garlic cloves): 3
Kata hua hara dhaniya (chopped coriander): 1 ½ tablespoon
Kate hue pudine ke patte (chopped mint leaves): 1 ½ tablespoon
Sabuth hari mirchein (whole green chillies): 2 -3
Nimbu (lemon): ½

Procedure:

1. Pressure cooker mein aalu aur 500 ml paani (water) dalkar aalu galne tak pakaiyye.

2. Aalu galne par, inka chilka nikal dijiye aur mash kar lijiye ke lumps na rahen.

3. Mash kiye hue aalu mein bareek namak, lal mirch powder, zeera powder, kuchli hui lehsan (crushed garlic), kata hua hara dhaniya, kate hue pudine ke patte, bareek kati hui hari mirchein aur nimbu ka juice daliye.

4. Achhi tarah se milakar is aalu ke mixture ko saath ya 7 hisson mein baant dijiye aur inke balls bana lijiye.

Aate ke liye (for the dough):

Gehun ka aata (wheat flour): 300 grams
Bareek namak (salt): 1/4th teaspoon
Tel (cooking oil): 1 tablespoon

Procedure:

1. Aate (wheat flour) mein bareek namak, tel aur aadha ya teen chauthai cup paani (½ or 3/4th cup water) dalkar aata goondh liiye.

2. Gundhe hue aate ko bees minute ke liye dhak kar rakh dijiye.

3. Aate ko saath ya 7 hisson mein baant lijiye.


For the final preparation:

Ingredients:

Aalu ke balls (potato balls)
Aata (dough)
Maska (melted butter)

Procedure:

1. Aate ka ek hissa lekar qushk aate ke istemaal se chhoti si gol roti bail lijiye.

2. Aalu ke ball ko roti ke centre mein rakh lijiye aur charon taraf se aate se yeh balls ko seal kar dijiye.

3. Thoda sa beech mein press kijiye. (pleat kiye hue hissa jahan aata zyada hota hai, woh taraf se roti beliye, is se yeh stuffing bahar nahi aayegi).

4. Khushk aate (dry flour) ki madad se iski roti ehtiyat se bail lijiye.

5. Frying pan mein roti ko ek taraf thoda saik lijiye aur palat dijiye.

6. Ab is roti par melt kiya hua butter ya maska phailakar lagaiyye.

7. Dono taraf butter lagakar, roti ko achhi tarah se saik lijiye aur nikal lijiye.

Garam garam Aalu Paratha Tomato sauce ya koi bhi chutney ya sauce ke saath serve kijiye.
