Tex-Mex Ground Beef Enchiladas Recipe| Homemade Enchilada Sauce Recipe

I make these enchiladas probably once a week. I sometimes use ground turkey in place of ground beef. You can also use low-moisture mozzarella or mild cheddar cheese. These enchiladas are perfect for dinner.

INGREDIENTS
lb lean ground meat of choice
1/2 small onion
2 cloves garlic
1/2 tsp ground cumin
1 tsp salt
pepper to taste
15 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz Colby Jack cheese

ENCHILADA RED SAUCE INGREDIENTS
3 to 4 Tbsp oil
1/4 cup all-purpose flour
2 Tbsp light chili powder
1 Tbsp beef or chicken bouillon
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
2 cups water
