Hey guys,
I have an AMAZING fried caraille recipe for you here! My mother-in-law (who is one of the best cooks I know!) is taking charge today in the kitchen. Growing up I NEVER liked caraille, but having tried hers, this is the ONLY one that I will eat! EVEN MY KIDS LOVE IT (and they are some picky eaters! lol!) She sure knows her stuff and her recipe is on point! Hope you guys get to try it and let me know how it was. Enjoy with some rice and dhal, or hot sada roti. You can also incorporate saltfish into this recipe.

You will need:
4 Full, Mature CARAILLE
4 cloves GARLIC
4 PIMENTO peppers
1 medium / large ONION
1 potspoon VEGETABLE OIL
SALT
A large, wide, heavy duty iron pot

1. slice caraille and remove seeds from inside.
2. Cut into rounds or slices
3. Add 2 TABLESPOON salt and leave for 30 minutes to spring water.
4. IN THE MEANTIME, ROUGH CHOP PIMENTOES, GARLIC AND SLICE ONION.
5. After 30 mins, spend 4 to 5 minutes SQUEEZING out ALL LIQUID from caraille as much as possible. This step is VERY IMPORTANT if you don't want bitter caraille!! DRAIN OFF LIQUID AND DISCARD.
6. Wash caraille under clean running water for few mins to get rid of extra salt. SQUEEZE DRY! CARAILLE MUST NOT HAVE ANY WATER IN THEM.
7. Using WIDE, CAST IRON POT on medium heat, add 1 POTSPOON vegetable oil.
8. When oil is HOT, add sliced onions (AND LOWER HEAT TO 3.5 OR 4.0) and cook until onions are soft.
9. Then add GARLIC AND PIMENTO (AND HOT PEPPER IF USING), 3 pinch of SALT and cook for 4 to 5 minutes.
10. Remove ALL seasonings from pot into a bowl and set aside.
11. Add more oil to the pot if needed.
12. Now add CARAILLE and SPACE OUT IN THE POT. COOK ON LOW HEAT (3.5 or 4.0) UNTIL THE END!
13. Turn caraille GENTY every few mins.
14. After 15 mins, add 3 pinch salt.
15. After 45 mins, make hole in centre and add seasonings back to pot.
16. Stir well and serve.
