Choose Sort A to Z or Sort Z to A to sort the data in ascending or descending order based on the selected field.
Sorting Values in a Pivot Table:

Click on any cell inside the pivot table.
Go to the Value Field Settings (accessible by right-clicking on a value field in the pivot table and selecting "Value Field Settings").
In the Value Field Settings dialog box, go to the Sort & Filter tab.

Sorting by Manual Order or Custom Lists:

Refreshing the Pivot Table:

Right-click anywhere inside the pivot table.
Choose Refresh to update the pivot table with the latest data from the source range.
