(Bob's Red Mill sometimes prints this recipe, or one very similar, right on their almond flour bag)

Mix together the following:
3 cups almond flour
1 teaspoon baking soda
1⁄2 teaspoon salt

In separate bowl, use mixer to blend:
1⁄4 cup coconut oil
1⁄4 cup maple syrup
2 eggs
1 teaspoon vanilla extract

Then add:
1 cup dark chocolate chips

With a spoon, scoop 1-inch mounds about 1 inch apart onto baking sheet lined with non-
stick parchment paper and bake at 375 F degrees for about 12 minutes. OR: Try lining a

microwave safe plate with parchment and scoop cookie dough in same proportions as
above but in a circle around the outer edge of the plate. Bake on high in microwave for 1
minute. If cookies are not quite done, bake for another 30 seconds.

SCRIPT for GLUTEN FREE ALMOND CHOCOLATE CHIP COOKIES:

You might think that counting carbs means NO cookies... ESPECIALLY if you are on a gluten free diet, but this recipe for almond chocolate chip cookies has NO grains and NO gluten. NO KIDDING! We found it on the back of a bag of Bob's Red Mill almond flour. It's easy. You can do it too! Let me show you how...

First, measure 3 cups of almond flour into a medium-sized bowl. Add 1 teaspoon baking soda and ½ teaspoon salt and set it aside for now.

In a separate bowl, put ¼ cup coconut oil and ¼ cup maple syrup. Mix it well for about 5 minutes. Then add 2 eggs and beat the mixture for about 2 MORE minutes. Now add 1 teaspoon vanilla extract and the almond flour mixture.

And finally... 1 cup of dark chocolate chips!

With a spoon, scoop 1-inch mounds of dough about an inch apart onto a baking sheet lined with non-stick parchment paper and bake at 375 F degrees for about 12 minutes. OR...
Try lining a microwave-safe plate with parchment paper and place the dough mounds in a circle around the outer edge of the plate. Bake it on high in the microwave for 1 minute. If the cookies are not quite done, bake for another 30 seconds at a time.

Baking them in the microwave will cook them from the inside out and can give them a crunchier texture. If you're baking them in the oven, let them cool a minute or two before removing from the pan. They should be nice and chewy.
So... when I tasted these amazing almond chocolate cookies? I told Mom, “NO gluten? NO PROBLEM!!!”
