Ingredients:

2 cups macaroni pasta

1 small onion (chopped)

1 cup bell peppers (mixed colors, chopped)

1 medium carrot (grated or chopped)

1 cup broccoli florets (optional)

1 small zucchini (chopped)

1/2 cup sweet corn (boiled)

1/2 cup green peas (boiled)

2-3 cloves garlic (minced)

2-3 tbsp olive oil

1/2 tsp chili flakes

1 tsp mixed herbs (oregano, thyme, basil)

Salt to taste

Black pepper to taste

1/2 cup tomato sauce or pasta sauce

Grated cheese (optional)


Instructions:

1. Cook the Pasta:

Boil the macaroni pasta in salted water according to the package instructions until al dente. Drain and set aside.



2. Prepare the Vegetables:

In a large pan, heat olive oil. Add chopped onions and garlic, sauté for 2-3 minutes until soft.

Add the chopped carrots, bell peppers, broccoli, and zucchini. Stir-fry for 4-5 minutes until slightly tender.

Add sweet corn and peas. Continue cooking for another 2 minutes.
