In this video, discover how to make Lasooni Palak, a vibrant and flavorful spinach dish infused with garlic. This easy recipe transforms simple ingredients into a delicious and aromatic curry that pairs perfectly with rice or chapattis. Follow along to create a nutritious and mouth-watering meal that’s sure to impress.

Ingredients
1 bunch of spinach
2 tsp whole cumin seeds
1/4 cup oil ; 1 tbsp oil (for tadka)
8 garlic cloves
1 medium onion
2 green chillies
1 medium tomato
1/4 tsp turmeric
1.5 tsp Chilli powder
1 tsp coriander powder
Salt to taste
3 tbsp besan / Gram flour
1/2 glass water

Method
• In a dry pan, add besan (gram flour). Roast over medium heat, stir continuously, until it gives off a nutty aroma. Set aside.
• In the same pan, heat oil. Add cumin seeds as cumin seeds begin to splutter, add finely chopped garlic. Saute until the garlic is fragrant.
• Add chopped onion to the pan and saute until translucent.
• Stir in finely chopped green chilies and continue to saute for a minute.
• Add chopped tomatoes and cook until they become soft and mushy.
• Add in turmeric, chili powder, and coriander powder. Season with salt to taste, and stir to combine all the spices with the vegetables.
• Add chopped spinach to the pan. Cook, stir occasionally, until the spinach shrink and is well incorporated with the spices and tomatoes.
• Add the roasted besan/gram flour to the spinach mixture. Mix thoroughly to combine, ensuring there are no lumps.
• Gradually add water to achieve your desired consistency, stir continuously to keep the mixture smooth and well-blended.
• Cook for a few more minutes until everything is well combined and the flavours meld together.
For Tadka
• In a small pan, heat 1 tablespoon of oil.
• Add 1 teaspoon of cumin seeds and 4 cloves of finely chopped garlic. Saute until the garlic is golden and fragrant.
• Add 1/2 teaspoon of chili powder to the tempering and immediately pour it over the prepared spinach mixture in the bowl.
• Pour the Lasooni Palak into a serving bowl. Drizzle the prepared tempering on top.
• Enjoy your Lasooni Palak hot, served with rice or chapattis.
