Thank y’all for stopping by! I get asked a lot about how to get kids cooking in the kitchen. Well, in this video I’m pretty honored to have my grandson Kaden helping me with this breakfast burrito recipe. He’ll show you his favorite way, and I’ll add a little cowboy spin on mine with a little spice. We hope you enjoy it.

Kaden’s Version:

½ can Spam, chopped
3 eggs
½ cup shredded cheese plus more for serving


1. Beat the eggs in a bowl. Stir in the Spam. Salt and pepper, to taste.
2. Pour the mixture into a greased skillet. Cook over medium heat. Right before the eggs are done, stir in the cheese until slightly melted.
3. Serve on a tortilla. Sprinkle with additional cheese, if desire.


Kent’s Version:

3 eggs
1 tablespoon mayonnaise
½ (4-oz.) can chopped green chilies
1 chipotle pepper (from can) diced, plus 1-2 teaspoons adobo sauce
Canola oil
4 small red potatoes, diced
½ can Spam, chopped
½ cup shredded cheese


1. In a bowl, whisk together the eggs, mayonnaise, green chilies and chipotle peppers and adobo sauce. Salt and pepper, to taste. Set aside.
2. Add just enough canola oil to a skillet to lightly coat the bottom. Add the potatoes and cook over medium high heat until they are lightly fried, stirring occasionally. About halfway in, add the Spam.
3. Reduce the heat to medium-low and add the egg mixture. Continue cooking, stirring frequently, until the eggs are cooked through. Stir in the cheese until lightly melted.
4. Serve on a tortilla with additional cheese, if desired.
