Ingredients:

1.5 kg chuck steak, diced
¾ cup cornflour (100g)
1 tsp crushed garlic
1 green capsicum, diced (150g)
2 carrots, diced (150g)
1 tbsp salt (30g)
1 tsp black ground pepper
½ cup sweet paprika (50g)
350g passata
1 chopped onion (200g)
750ml beef stock

Instructions:

1.Combine wet ingredients: In the slow cooker bowl, whisk together the beef stock, passata, cornflour, paprika, salt, pepper, and garlic until smooth.
2.Add remaining ingredients: Stir in the diced beef, carrots, capsicum, and onion.
3.Cook: Cover and cook on low for 8 hours or high for 4 hours.
4.Thicken: About 30 minutes before serving, stir the goulash to ensure an even consistency.
5.Serve: Serve hot over mashed potatoes and garnish with chopped parsley.

Notes:

For a thicker goulash, increase the amount of cornflour.
To add depth of flavor, brown the beef before adding it to the slow cooker.
Serve with crusty bread for soaking up the rich gravy.
This goulash can be made ahead of time and reheated for a quick and easy meal.
For a vegetarian version, substitute the beef with hearty vegetables like eggplant, lentils, or chickpeas.
