Ingredients:
14 oz firm tofu
1 tbsp sesame oil
2 cloves garlic, minced
1 tbsp soy sauce or tamari
1 tsp rice vinegar
1 tbsp hoisin sauce (optional)
1 tbsp lime juice
1 cup shredded carrot
1 cup finely sliced bell pepper
2 green onions, sliced
8-10 butter lettuce leaves
Optional toppings: chopped cilantro, crushed peanuts or sesame seeds, lime wedges
Instructions:
1) Press tofu to remove moisture, then crumble.
2) Heat a skillet over medium heat, add sesame oil.
3) Sauté garlic until fragrant, about 30 seconds.
4) Add tofu; cook until lightly browned, 5–7 minutes.
5) Stir in soy sauce, rice vinegar, hoisin (if using), and lime juice; cook 1–2 minutes.
6) Add carrots, bell pepper, and green onions; cook 1–2 minutes until crisp-tender.
7) Wash lettuce leaves and pat dry; separate leaves.
8) Spoon filling into lettuce leaves and garnish with cilantro and peanuts or sesame seeds. Serve immediately.
Tip: to make gluten-free, use tamari. These cups also reheat well if needed.
