Speedy Pork and Noodle Stir-Fry

Serves 4 Prep 5 mins Cooking 15 mins

340g Roll’d Rice Vermicelli Noodles
500g Coles Australian Pork Mince
300g pkt Coles Kitchen Ready to Stir-Fry Superfood Mix
1/3 cup (75ml) Roll’d Hoisin Sauce
½ bunch coriander, leaves picked, stems finely chopped

1. Cook the noodles following packet directions. Drain well.
2. Meanwhile, heat a large non-stick frying pan over high heat. Add the mince and cook, stirring, for 5 mins or until the mince changes colour.
3. Add the superfood mix to the mince. Cook, stirring, for 3-4 mins or until the vegetables are just tender.
4. Add the noodles, hoisin sauce, coriander stems and ¼ cup (60ml) water. Cook, stirring, for 1-2 mins or until the noodle mixture is heated through and well combined.

Sprinkle the noodle mixture with coriander leaves to serve.
