Lemon Blueberry Cheesecake Bites

One of my favorite spring and summer flavors is the combination of lemon and blueberry. I already made some delicious lemon ricotta pancakes with a homemade blueberry syrup earlier this year for Mother’s Day, so join me in the kitchen today as I show you how to make Lemon Blueberry Cheesecake Bites. One of the nice things about making cheesecake bites, rather than the traditional full-size cheesecake you would make in a springform pan is the fact that the cheesecake is already pre-portioned into nice sizes, so you don’t have to worry about cutting the cake into pieces. This recipe is easily adaptable to make cheesecake bars or a traditional round cheesecake, you would just have to alter the cooking times. If you haven't tried the delicious combination of lemon and blueberry, I highly encourage you to do so, it’s a flavor pair you don’t want to miss!
