Elderflower syrup recipe, quoted from our friend Tamás:

1- Add 2 kg of sugar and 25 g citric acid to 3 l of water.
2- You warm it up but needn't let it boil.
3- Add the juice of 2 lemons add the slices of the rind, and finally, throw in 20 nice big flowers to the bowl.
4- Don't wash the flowers beforehand! That would remove a lot of the pollen which would result in thinner flavour.
5- Give it a good stir, cover it and place the bowl in the fridge. Stir it every now and then.
6- After 2 days you remove all the solid contents, squeeze the flowers well, filter all the liquid and warm the syrup up again.
7- Just before it begins to boil, turn off the heat, pour it into bottles, let them cool and place them in the fridge.
