Ingredients for caramel Kheer
Milk (full cream) - 1 litre
Rice (soaked) - ¼ cup (50 grams)
Sugar - ½ cup (100 grams)
Raisins - 1 to 2 tbsp
Cashews - 10 to 12
Cardamoms - 4
Pistachios (chopped) - 1 tsp
Ghee - 1 tbsp

How to make caramel Kheer
1- Take a liter of milk in a vessel and boil it on high flame.
2- Stir it once or twice in between of process.
3- In the meantime, chop 10 to 12 cashews.
4- Take 4 green cardamoms, peel them and make their powder.
5- After boiling the milk, add a ¼ cup of soaked rice to it and stir it.
6- Cook until it reaches to the thicker consistency and rice melts.
7- Kheer will be cooked after half an hour.
8- Preheat a pan, add a tablespoon of clarified butter and melt it.
9- Add the chopped cashews to it and roast them.
10- Roast until its colour changes.
11- After roasting the cashews, roast 1 to 2 tablespoons of raisins too.
12- Preheat a pan, add a ½ cup of sugar to it and cook on medium to high flame.
13- Stir and cook until sugar dissolves in it.
14- Cook while stirring it furiously and until it melts.
15- After the sugar melts well and becomes brown then switch off the flame.
16- Mix some water to it and cover it.
17- Switch on the flame, add it the Kheer and cook while stirring it.
18- Add the roasted dry fruits, cardamom powder to the Kheer and cook it for 1 to 2 minutes.
19- Caramel Kheer is ready to be served.
20- Garnish it some chopped pistachios.

Suggestions
1- You can serve it hot or cold as per you desire.
