Green Chili Chicken Casserole:
3-3.5 cups uncooked rice
2 cups cooked, shredded or diced chicken
1-2 cans green enchilada sauce
8 oz green chilies
1-2 cups sour cream
1-2 cans cream of chicken soup (optional)
2-3 cups shredded cheese
Garlic powder
Salt
Pepper

Cook rice.
Mix cooked rice, chicken, enchilada sauce, green chilies, sour cream, cream of chicken soup (if using), 1-2 cups shredded cheese, and spices to taste. Make sure the mixture is moist. Add more wet ingredients if necessary.
Pour mixture into a greased 9x13 pan
Top with remaining shredded cheese
Bake at 350 for 20-30 minutes until cheese is melted and casserole is heated through/bubbly.

Sloppy Joe Tater Tot Casserole:
1.5-2 lbs ground beef or turkey
1 cup chopped celery
1 cup chopped onion
1 can condensed tomato soup
1/4 cup ketchup
1 T vinegar
1.5 t Worcestershire sauce
1/2 t garlic powder
1/2 t salt
1/4 cup brown sugar
2 cups cheese
32 oz bag of frozen tater tots

Brown beef with onions and celery; drain
Whisk tomato soup, ketchup, vinegar, Worcestershire sauce, garlic powder, salt, and brown sugar in a separate bowl
Pour sauce into meat mixture on the stove and simmer for 5-10 minutes until thickened.
Pour into 9x13 pan
Top with 1 cup shredded cheese
Layer a single layer of tater tots on top of cheese
Top with remaining 1 cup of cheese
Bake at 400 for 20-25 minutes until cheese is melted and tater tots are cooked through
