We are going to be making a soft, fluffy, and oh-so-jiggly yogurt cake that is not only delicious but also super easy to whip up. Trust me, this cake is going to be a showstopper at your next gathering or even just for a cozy night in.

First things first, let's talk about the star of the show - yogurt. This creamy and tangy ingredient is going to be the key to achieving that perfect soft and fluffy texture in our cake. Not to mention, it adds a lovely depth of flavor that you won't be able to resist.

Sifting cake flour when making a sponge cake is beneficial because it removes lumps, aerates the flour, and ensures a lighter, airier texture by incorporating more air into the batter, leading to a delicate and soft crumb, which is ideal for sponge cakes that rely on a light and airy structure; the low protein content of cake flour also contributes to this tenderness by minimizing gluten development.

Adding salt to a cake is done in small amounts to enhance the flavor of other ingredients by balancing the sweetness and creating a more complex taste, essentially making the cake taste better; while you shouldn't taste the salt directly, its absence would result in a bland cake.

Place the baking pan in a preheated oven at 140°C and bake for 20 minutes. This initial higher temperature helps set the structure of the cake and allows it to rise properly.

After 20 minutes, reduce the oven temperature to 110°C and continue baking for 45 minutes. Lowering the temperature prevents over-browning and ensures even baking, allowing the cake to develop a soft, airy texture without drying out.

Avoid opening the oven door too often, as sudden temperature changes can cause the cake to collapse. Once baked, test for doneness by inserting a skewer or toothpick into the center—if it comes out
