INGREDIENTS:
• 400 grams Medium Silken Tofu (diced about 1-inch cubes)
• 1 tbsp Ginger (Grated)
• 3 Stalks Green Onion (chopped, use white part for stir fry and green part for garnish)
• 3 cloves Garlic (Finely chopped)
• 3 tsp Fermented Soybean Sauce (Brand: Punchun)
• 200 grams Ground Pork or Beef
• 2 tsp Chili Bean Sauce/Toban Djan (Brand: Lee Kum Kee)
• 1 cup Chicken Broth or Water
• 2 tsp Cornstarch
• 4 tsp Water
• 1 tbsp Soy Sauce
• 1 tbsp Roasted Sichuan Chili Oil (We use chili oil instead of Sichuan peppercorns, it's easier to cook and still provides the numbing taste)

INSTRUCTIONS
• Boil water in a saucepan over high heat and add diced tofu. Cook for a minute and drain without breaking up the tofu. Set aside.
• Using a wok, heat oil until smoking; add green onion (white part), garlic, and ginger and stir for a minute. Add fermented soybean sauce and continue stirring for 2 minutes.
• Add pork and stir for a minute. Add chili bean paste and stir until the pork is cooked.
• Pour chicken broth.
• Combine cornstarch and water in a small bowl and pour. Stir for 2 minutes or until the sauce thickens.
• Add soy sauce and roasted Sichuan chili oil.
• Gently add the tofu and lightly toss to mix with a spoon.
• Simmer and cook for an additional 2 minutes.
• Garnish with chopped green onion (green part) and serve with hot steam rice.
