A popular Indian and Pakistani dish! Here's a simple recipe for Aloo Gobi Rice:

Servings: 4-6

Ingredients:

For Rice:

2 cups basmati rice
4 cups water
1 tsp salt
1 tsp ghee or oil

For Aloo Gobi:

1 medium cauliflower (gobi), broken into florets
2 medium potatoes (aloo), peeled and diced
1 onion, chopped
2 cloves garlic, minced
1 tsp ginger paste
1 tsp cumin seeds
1 tsp coriander powder
1 tsp garam masala powder
1/2 tsp turmeric
1/2 tsp red chili powder (optional)
Salt, to taste
2 tbsp ghee or oil
Chopped cilantro, for garnish

Instructions:

Rice:

1. Rinse rice; soak for 30 minutes. Drain and cook with salt, water, and ghee/oil until tender.

Aloo Gobi:

1. Heat ghee/oil in a pan. Add cumin seeds; let splutter.
2. Add onion; cook until translucent.
3. Add garlic, ginger paste; cook for 1 minute.
4. Add cauliflower, potatoes; cook for 5 minutes.
5. Add coriander powder, garam masala, turmeric, chili powder (if using); mix well.
6. Cook, covered, until vegetables are tender (10-12 minutes).
7. Season with salt.
