Ingredients:

For the Sweet & Sour Sauce

1/4 cup Apple cider vinegar
2 tablespoons tamari
1/2 cup organic raw sugar (brown if possible)
2 tablespoons non-GMO cornstarch
1/4 cup ketchup
1/4 cup water

Directions:
Whisk all ingredients in a bowl. Make sure there are no lumps (lumps are for chumps). Next, heat in a medium saucepan on low flame until it gets good & thick. Set aside.

Ingredients:

Coconut Mango Rice

2 cups washed and drained Basmati Rice
4 cups water
2/3 cup mango chunks
1/2 cup shredded coconut
3 tablespoons raw sugar
1 teaspoon salt.
1 tablespoon coconut oil (or plant based butter - Miyoko's rocks)

Directions:
In a medium pot place oil/butter/ Heat for 1 minute on low/medium flame. Add rice. Stir for 3-4 minutes on medium flame. Add shredded coconut and cook 1 minute. Next add water, mango, sugar, salt and bring to a boil. Cover and cook on low flame. After two minutes stir once to combine all ingredients. Cover and cook 12-15 minutes more on very low flame until all water is evaporated. Set aside

Ingredients:

For the Stir Fry

2 heads of broccoli cut into spears (mostly flowers not too much stem roughly 2")
4 cups spinach (de-stemmed, chopped)
2 red bell peppers (cut into thin strips)
1/4 cup coconut cream
1.5 cups pineapple chunks (if frozen let thaw)
2 bags Trader Joe's Mandarin Chickenless Orange Morsels or Gardein Mandarin Orange crispy Chik-n (10 oz. bag)
2 tablespoons organic coconut oil

Directions:
Cook Mandarin morsels as directed and set aside covered. (btw you can substitute this with tempeh just bake prior with sweet & sour sauce)

Heat oil in a large wok or skillet. Place in red peppers cook on med/high flame. When slightly tender add broccoli. Cook 5-7 minutes 'til slightly tender. Next add 1/4 cup sweet & sour sauce (store extra in 'fridge). Let veggies get covered with it. Put in coconut cream. Stir. Add back morsels and pineapple chunks cook 3 minutes - add spinach and let it get tender. Cover and set aside.

Use 1 package of organic tortillas. Heat them up prior to serving .
