At New York’s Lincoln Ristorante, pastry chef Richard Capizzi uses drywall scrapers to glaze cakes, notched trowels make beautiful chocolate curls, heat guns (typically for removing wallpaper) to affix garnishes and power drills to peel apples at hyper speed.
