Tantanmen is a mildly spicy noodle soup dish that’s both savory and creamy. The creaminess comes from the sesame paste and (oat or whole) milk. And the simple thing about this dish is that the soup base is made with a simple tare (aka dipping sauce).

Ingredients (Serves ~4)

Tare (Soup Base)
4 tablespoons of light soy sauce
4 tablespoons of sesame paste (substitute: peanut butter)
2 teaspoons of rice vinegar
1 teaspoon of sugar
2 tablespoons of chili oil

Stock
4 cups of chicken stock
4 cups of oat milk (or whole milk)

Ground Pork
1 pound of ground pork (substitute: ground turkey, ground beef, or any protein)
2 tablespoon mirin
2 tablespoon minced ginger
2 cloves of minced garlic (feel free to add more)
2 tablespoon chili bean sauce

Noodles & Toppings
Your choice of veggies: pea shoots, bok choy, spinach
Your choice of fresh noodles
4 stalks of scallions, chopped
cilantro to taste, chopped

Instructions

1. Prep all your dry ingredients (i.e. cilantro, green onions, garlic, ginger)

Ground Pork
1. Place your 1 lb. of ground pork into a medium mixing bowl
2. Pour in 2 tablespoons of mirin and 2 tablespoons of minced ginger
3. Mix the ground pork to incorporate ingredients
4. Set aside for 15 minutes to marinate

Tare
1. Throw all the tare ingredients into a small mixing bowl
2. Mix until the sauce reaches a thick texture
3. Set aside for later

Simple Stock
1. Bring 4 cups of chicken stock and 4 cups of oat milk to a LOW SIMMER (avoid boiling the stock to prevent the milk from curdling)
2. Keep at a low simmer until ready to serve

Noodles & Pea Shoots
1. Blanch your pea shoots (~1 minute)
2. Boil your noodles as per package instructions

Serving
1. Divide your tare into your servings bowls (it came out to about 320 grams of tare each for me)
2. Pour in 3 - 4 scoops of your simple stock to hydrate and form soup base
3. Place your noodles, crispy ground pork, pea shoots, green onions, and cilantro into your bowls
4. You're ready to serve!
