Grab-and-Go Country Breakfast Muffin – Back to School Muffins – The Hillbilly Kitchen Don’t let them leave home hungry! These muffins are a full country breakfast you can hold in your hand and eat or stuff in your pocket and run out the door. They are the perfect blend of sausage, scrambled eggs, biscuits and a hint of pancakes topped with maple syrup.

While you can make them without the maple syrup, I highly recommend it. The syrup only changes the flavor slightly, but the smell is irresistible. These are the perfect make ahead breakfast for busy mornings or crowds. They can be kept in the refrigerator for about 5 days or frozen for months. Make them in themed holiday muffin cups for an extra special touch.

Your family will never have to run out the door without a real breakfast again!

Ingredients:
1 pound Sausage Fried and Crumbled
6 Eggs Cooked Scrambled and Crumbled
1 cup Shredded Cheddar Cheese
1/3 cup Maple Syrup or Sugar
½ cup Milk
2 Eggs
¼ cup Melted Butter
2 ¼ cups Self-Rising Flour
(2 c AP Flour, 1 tbsp Baking Powder, ¼ tsp salt)
