Daodoo Nagar Valley Traditional Soup/Himalayan Noodles Soup
Ingredients:
Tomatoes 2 medium size
cooking oil 3tbs
Onion chopped 1medium
Ginger Garlic paste crushed 1tbs
Chicken 1kg
Turmeric powder half tsp
Salt 1tbsp or to taste
Black pepper crushed 1tsp
cumin and coriander crushed 1tbsp
cumin powder 1tsp
gharam masala tsp
fenugreek leaves (Methi) 3 tbsp
water 8- 10 cups
whole wheat flour dough

Method:
In pot add cooking oil, onion and fry until light golden
add crushed cumin and coriander
add chicken and ginger garlic paste and mix well until changes color.
add chopped Tomatoes and cook 1mint.
add turmeric powder ,salt ,Black pepper, gharam masala powder, cumin powder. Mix well and cook for 5 to 6 minutes.
Add water mix well and bring it to boil. Cover partially and cook on medium flame for 10 to 15 minutes.
on working surface, place whole wheat flour dough.
sprinkle dry flour and roll out with the help of rolling pin.
sprinkle dry flour, fold all edges and start cutting the thin strips out of rolled dough using a knife. ( use as much as flour as required so that the folded sides does not stick to one another).
NOW add whole wheat Noodles and fenugreek leaves ( dry Methi) and Mix.
cover and cook on low flame for 6-8 minutes.
Serve hot with vinegar!
