📌 Ingredients
1 lb smoked sausage sliced
1 small onion diced
1 green bell pepper diced
3 cloves garlic minced
2 tsp Cajun seasoning or more to taste
1 tsp smoked paprika
2 tbsp tomato paste
1 can 14.5 oz fire-roasted tomatoes
4 cups chicken broth
1 bay leaf
1 tsp dried thyme
2 cups uncooked long-grain white rice not instant
Fresh parsley chopped or green onions

Directions
Heat skillet over medium heat. Add the sausage and cook until browned, about 4 to 5 minutes. Remove the sausage and set aside. In the same skillet, sauté the onion and bell pepper until softened, about 5 minutes. Add the rice and cook for 2 to 3 minutes, stirring often, until lightly toasted. Stir in the tomato paste anf garlic cook for 1 minute. Add the fire-roasted tomatoes, chicken broth, and bay leaf, thyme and season to taste . Stir the sausage back into the skillet, reduce the heat to low, cover, and cook for 18 to 22 minutes, stirring occasionally, until the rice is tender and most of the liquid has been absorbed. Remove the bay leaf, fluff the rice, and taste for seasoning. Garnish with green onions and parsley before serving. Thanks for watching ❤️
