Ingredients for Recipe 1:
2 tablespoons oil
1 teaspoon mustard seeds/ rai
1 teaspoon urad dal
1 teaspoon roasted chana dal
1 teaspoon ginger, finely chopped
1 teaspoon green chillies, finely chopped
1 cup (170g) semolina/suji/rawa
1 tablespoon fresh coriander, finely chopped
1 cup (240g) curd/dahi
¾ cup water (approximately)
1 eno (fruit salt) sachet or ½ teaspoon baking soda
Salt to taste
8-10 roasted cashews

For Chutney:
1 cup fresh coconut
2 medium size green chillies
2-3 garlic cloves
1-inch ginger
1 lemon-sized piece of tamarind
1 teaspoon cumin seeds
2 tablespoons raw peanuts
1 small handful of fresh coriander
Salt to taste
Water as required

For Tadka
2 tablespoons oil
½ teaspoon mustard seeds
½ teaspoon urad dal
1 pinch asafetida/ hing
2-3 dried red chillies
A few curry leaves

Ingredients for Recipe 2:
1 cup jowar atta
3 tablespoons onion finely chopped
1 teaspoon green chilli finely chopped
1 teaspoon ginger finely chopped
2 tablespoons fresh coriander finely chopped
1 teaspoon cumin seeds
1 teaspoon red chilli flakes
½ teaspoon black pepper powder
Salt to taste
2.5 cups water in total
Oil/ghee for cooking

For Chutney:
2 teaspoons refined oil
1 teaspoon cumin seeds/jeera
1 teaspoon urad dal
1 teaspoon coriander/dhaniya seeds
1 pinch asafetida/heeng
¼ cup raw peanuts
1 teaspoon ginger
3-4 cloves garlic
1 onion (medium size) roughly chopped
4 dried chillies
2 tomatoes (medium size) roughly chopped
Salt to taste
¼ teaspoon jaggery

For Tadka
1 teaspoon oil
1 teaspoon mustard seeds/rai
1 teaspoon urad dal
1 pinch asafoetida/ hing
8-10 curry leaves
2 dried red chillies

Ingredients for Recipe 3:
For the batter
1 Small lauki
1 cup (200g) suji/rava/ semolina
1 cup (250g) dahi/ curd
water, as required
¼ cup onion
¼ cup capsicum
¼ cup sweet corn
¼ cup green peas
1 green chilli
1 teaspoon ginger
½ teaspoon black pepper powder
1 teaspoon red chilli flakes
1 teaspoon jeera/ cumin seeds
2 tablespoons fresh coriander
Salt to taste
1 sachet eno/ fruit salt

For The Vegetable Raita
2 cups (500g) dahi/ curd
¼ cup onion
¼ cup tomato
¼ cup cucumber
2 tablespoons fresh coriander
1 green chilli
½ teaspoon jeera powder/ cumin powder
¼ teaspoon black pepper
½ teaspoon rock salt
Salt to taste

Ingredients for Recipe 4:
For the Chilla
½ cup gram flour/besan
½ cup semolina/suji
2 tablespoons green capsicum, finely chopped
2 tablespoons onions, finely chopped
2 tablespoons carrots, grated
2 tablespoons yellow bell peppers, finely chopped
2 tablespoons red bell peppers, finely chopped
1 teaspoon chilli flakes
½ teaspoon carom seeds/ajwain
¼ teaspoon black pepper powder
1 green chilli, finely chopped
1 teaspoon ginger, finely chopped
2 tablespoons spring onions, finely chopped
2½ cups water
Salt to taste

For Green chutney
1 cup fresh coriander
3 green chillies
3-4 garlic cloves
1 small piece ginger
1 teaspoon cumin seeds
½ teaspoon sugar
1 tablespoon lemon juice
2 tablespoons roasted chana dal
1 tablespoon curd
Water as required
Salt to taste
