I preset Vegan Green Lentil Soup Recipe in this video. I show how to make this homemade and healthy vegetable soup in an easy way. This lentil soup owns its rich taste to the Mediterranean spices. It can be great additions to your healthy diet (it can assist a weigh loss) and a vegan lifestyle.

Lentil soup recipe ingredients:
5 onions
coconut oil or your favorite cooking oil
1 lbs green lentils
3 tsp turmeric
1 tsp curry
1/2 tsp paprika
cayenne pepper (optional)
Salt and black pepper
2 liters filtered water
coconut milk for garnish
lemon juice
chopped parsley

I personally prefer green lentils for this lentil soup recipe but if you want to try different color you can feel free and choose whatever color you like. This recipe works with all lentils without a drop off discrimination regarding their color. Just remember to rinse lentils with cold water as they may have some dust. Drain them well before adding them to the pot. In this recipe I don't use any animal products so it is a 100% vegan recipe. I use coconut oil as cooking oil and in the end I also use coconut milk. I don't mind the taste of coconut milk in my food but if you are not the fan of that you can substitute this with your choice of cooking oil or milk. As you can see I use a lot of Mediterranean spices such as turmeric and curry. Without those spices this soup doesn't exist. Even if you are scared of adding this amount of spices I advise you to go out of your comfort zone and explore little bit with different tastes - you may be surprised and discover that you have new preferences. It is important to blend this soup after cooking. If you choose you may also add less water if you want this soup to be thicker. Bread is a nice addition. I'm sure you will enjoy making this healthy and easy recipe. It is a great fall and winter dinner dish.

Cooking instructions for this soup:
1) Cut onions into cubes and sauté on the pan with oil.
2) Wash lentils and drain them well. Add lentils to sautéed onions.
3) Add spices such as: turmeric, curry, cayenne pepper (optional), salt and black pepper. Fry for couple of minutes.
4) Add 2 liters of filtered water and cook until lentils are soft.
5) Blend soup in the blender until completely smooth.
6) Serve on the soup plate or bowl. Add some coconut milk and chopped parsley on the top.
7) Squeeze fresh lemon when it is served.
8) Serve with fresh bread.
