Welcome to our Food Channel! Today we’re bringing you a delicious One Pot Mutton Pulao recipe that’s full of rich spices, dry fruits, and tender mutton – all made in a pressure cooker for ease and flavor. Perfect for special occasions or a hearty weekend meal!

Ingredients:

For Soaking Rice:
. 2 cups basmati rice
. 2 cups water
. 1 tbsp salt

For the Pulao:
. 1 tbsp ghee
. Oil (as needed)
. 3 onions (sliced)
. 1 cinnamon stick
. 2 cardamoms
. 2 cloves
. 1 bay leaf
. 2 mace strands
. 1 star anise
. 2 green chillies (slit)
. 3/4 tsp salt

For Dry Fruit Paste:
. 9 cashews (soaked)
. 7 almonds (soaked & peeled)
. 1/3 cup water

For the Mutton:
. 1/2 kg mutton
. 1 & 1/2 tbsp ginger garlic paste
. 1/2 cup curd
. 3/4 cup water

Final Additions:
. Mint leaves (handful)
. Coriander leaves (handful)
. Soaked basmati rice (from earlier)
. 1 & 1/2 tsp coriander powder
. 1 tsp pepper powder
. Juice of 1/2 lemon

Instructions:

Soak the Rice:
In a bowl, rinse basmati rice thoroughly. Add 2 cups water and 1 tbsp salt. Soak for 30 minutes.

Prepare the Base:
In a pressure cooker, heat oil and ghee. Add sliced onions and sauté until translucent.
Now add whole spices – cinnamon, cardamom, clove, bay leaf, mace, and star anise. Sauté briefly until aromatic.
Add green chillies and 3/4 tsp salt. Stir well.

Make Dry Fruit Paste:
In a blender, grind soaked cashews and almonds with 1/3 cup water into a smooth paste.
Add this paste to the cooker on low flame. Stir well and add a splash of water to avoid burning.

Cook the Mutton:
Add mutton pieces, followed by ginger garlic paste, curd, and 3/4 cup water.
Mix well, cover the lid, and pressure cook for 4 whistles. Turn off heat and let it cool naturally.

Final Layering:
Once pressure releases, open the lid. Add mint leaves and coriander leaves. Mix gently.
Add the soaked basmati rice (drained), coriander powder, pepper powder, and lemon juice.

Mix lightly to avoid breaking the rice grains.

Final Cooking:
Close the lid again and pressure cook for 2 whistles. Turn off heat and let it sit for 5 minutes.

Serve & Enjoy:
Fluff up the pulao gently and serve hot with raita or salad. Enjoy this rich and comforting one-pot mutton pulao with your loved ones!
