बुंदीचे लाडू करण्यासाठी लागणारे साहित्य
• २ कप बेसन
• १/४ चमचा हळद
• चिमूटभर मीठ
• १ कप पाणी
• २ मोठे चमचे बेसन
• खायचा हिरवा रंग
• जरुरीनुसार पाणी
• २ मोठे चमचे बेसन
• खायचा लाल रंग
• जरुरीनुसार पाणी
• १ १/४ कप साखर
• १ कप पाणी
• चिमूटभर खायचा सोडा
• तळण्यासाठी तेल
• १ मोठा चमचा मगज बी
• थोडे सुक्यामेव्याचे काप (काजू आणि बदाम)(ऐच्छिक)
• काही बेदाणे (ऐच्छिक)
• १/२ चमचा वेलची पूड
• २~३ मोठे चमचे साजूक तूप

Ingredients:
• 2 cups Besan
• 1/4 tsp Turmeric powder
• A pinch of Salt
• 1 cup Water
• 2 tbsp Besan
• Green food color
• Water as needed
• 2 tbsp Besan
• Red food color
• Water as needed
• 1 1/4 cup Sugar
• 1 cup Water
• 1 pinch of Baking soda
• Oil for frying
• 1 tbsp Melon seeds
• Few chopped Dry nuts (Alomnds and Cashew nuts)(Optional)
• Few Raisins (Optional)
• 1/2 tsp Cardamom powder
• 2~3 tbsp Ghee

Method:
• Sieve besan, turmeric powder and salt together into a bowl and add a little water at a time to make
batter. The batter should have pouring consistency.
• In separate bowls make red and green colored batter by mixing besan, food color and water. Batter
for ladoo is ready.
• Cover and rest the batter for at least 10 minutes.
• Heat up a pan on medium heat and add sugar and water.
• Cook it well together on high heat until sugar dissolves and mixture boils.
• When the sugar dissolves and mixture boils well, turn the heat to low and simmer the mixture for 5
minutes more.
• For checking the consistency of the sugar syrup, take few drops on the syrup in a dish and let it
cool down completely. Check between 2 fingers. If single thread is formed but it breaks, it means
that the sugar syrup is ready.
• It should be neither too thick nor too thin, a little more thick than gulabjam syrup.
• Turn the gas off and sugar syrup is ready. add baking soda into the batter and mix well.
• Heat up oil on high heat in a pan.
• Mix the batter well once and spread a ladleful batter at a time on the zara that is you have to hold
above the hot oil. Start spreading the batter along the edge of the zara and finish off at the center.
Repeat the process 2-3 times.
• Remove all the batter from the zara every time before making boondi.
• Fry boondi well on high heat. When the boondi is fried well, take it out, drain excess oil and transfer
it into a dish.
• In the same way make green and red boondi. Make sure to add a very little baking soda before
making both red and green colored boondi.
• Mix all the boondi well so that the colored boondi will be mixed well.
• Transfer the boondi into the sugar syrup and add melon seeds, dry nuts, raisins and cardamom
powder.
• Adding dry nuts, raisins and melon seeds is optional. You can skip it if you don’t want.
• Mix everything well together and rest it for about an hour. Add ghee and mix well.
• Mix the boondi well at regular intervals. You can serve this as it as god boondi.
• Roll ladoos from the mixture and boondiche ladoo are ready.
• You can make 21 ladoos from the ingredients used.
• Store them in an airtight container. They have shelf life of about 2-3 weeks.
