Low Carb Keto Recipe: Moroccan Style Chicken

Low Carb Keto Moroccan Style Chicken.  This rich, flavorful chicken is a dish everyone will love. 

Low Carb Keto Moroccan Style Chicken

2 Tbsp Coconut Oil
2 lbs boneless, skinless Chicken (I used chicken thighs but you can use breast)
1 tsp ground Cumin
1 tsp Paprika
1/2 tsp ground Coriander
1/4 tsp ground Cumin
1/8 tsp ground Clove
1/2 cup (52g) diced Onion
1 medium, chopped Zucchini (Courgette)
1/2 tsp dry Thyme
2 Tbsp (18g) minced Garlic
1/2 cup (90g) sliced Olives (Black or Green)
1 1/2 cup (355g) Chicken Broth
1 tsp dried Parsley
4 or 5 slices of Lemon
Salt and Pepper to taste

In a large mixing bowl, add cumin, paprika, coriander, cumin, clove, and chicken.  Coat chicken with spices.  

In a large skillet, heat oil on medium-high heat.  Once oil is hot, add chicken and brown on all sides.   Once chicken starts to brown, remove chicken from the pan and add onions.   Saute onions until they begin to become translucent.   Add zucchini, minced garlic, and dry thyme and allow to simmer for 5 to 10 minutes.

Add Chicken back into the skillet.  Salt and pepper mixture (about 1/4 to 1/2 tsp each depending on your taste).    Add chicken broth and stir well.   Mix in olives and add in lemon slices.  Allow to simmer on medium heat for 30 minutes.

Serve with Turmeric Cauliflower Rice
