Main villages to visit in SANTORINI: Oia, Fira (capital) & Imerovigli
Archeological sites worth visiting: Ancient Thera & Akrotiri
Other nice spots include Red beach, Akrotiri lighthouse, etc.

Local Greek food: tzatziki, souvlaki, moussaka, octopus...
Accommodation: SANTORINI is also known for its luxury hotels with sea view and private pool or hot tub. I highly recommend you to try one of them (there are plenty) for a unique experience. We really enjoyed our stay at Arise Suites https://arise-suites.com.
How to get to SANTORINI island? By airplane (we had a direct flight from France), or ferry.
Transportation in SANTORINI: We rented a car to have more flexibility to explore the island and didn't regret it at all. Do not expect fancy cars though.
Season & duration: We went there in May before the touristic season, and stayed for a week to have time to chill (but typically you would only need 3 to 5 days max). Besides 2 windy days, the weather was very nice.
