Hello Folks!

So tonight for tea we had this delicious creamy mushroom chicken pasta or chicken & mushroom penne pasta in a gorgeous creamy sauce with chicken and mushrooms. Perfect served with a slice or two of garlic bread :) So easy to make and can be on the table in no time at all.

Saves 3 - 4 adults generously.

Ingredients:-
Olive oil for frying
3 Cloves of garlic - finely sliced or minced
300g (10.5 oz) Penne pasta
2 Shallots or one small onion - finely diced or chopped
1 tsp dried oregano
1 tsp dried mixed Italian herbs
1/2 tsp each black pepper & salt
400g (14 oz) Chicken fillets, breast or thigh meat - cut into small pieces
200g (7 oz) of mushrooms - sliced or diced
150ml (5.2 oz) Double cream
50ml (1.7 oz) Creme fraiche
300ml (10.5 oz) Pasta water
1 Chicken stock cube - I used an OXO cube
Parsley to serve - chop finely
Salt & pepper to taste

*Shaved parmesan can also be added to give it a cheesy kick! :)*
