Get ready for a Samosa feast! In this video, Natasha Gandhi guides you through making a variety of Samosas, including Potli Samosas and Samosa Rolls, all cooked to perfection in the Borosil Air Fryer. Get ready for a delicious and fun cooking experience!

For the Dough-

Ingredients:
• 1 cup whole wheat flour
• 1/4 cup semolina
• 1 heaped tablespoon ghee
• A pinch of salt
• A pinch of ajwain
• Water, for kneading

Instructions:
1. In a bowl, combine whole wheat flour, semolina, ghee, salt, and ajwain.
2. Rub the mixture until it gets a crumbly texture.
3. Add water gradually and knead into medium-tight dough. Rest for 20-30 minutes.

For the Aloo Filling-

Ingredients:
• 1-inch ginger piece
• 2 green chilies
• 1 tbsp cumin seeds
• 1/2 tbsp coriander seeds
• 1/2 tbsp fennel seeds
• 1 tbsp ghee
• 1 cup boiled potatoes, mashed
• 1/4 cup green peas
• 1 spoonful of kasuri methi
• Salt, to taste
• 2 tsp chaat masala
• Chopped coriander leaves

Instructions:
1. In a mixing jar, grind ginger, green chilies, cumin seeds, coriander seeds, and fennel seeds into a coarse mixture.
2. Heat ghee in a pan and cook the coarse masala for a while.
3. Add boiled potatoes, green peas, kasuri methi, salt, chaat masala, and chopped coriander. Mix well and set aside.

Shaping the Samosas-

Triangular Samosa:
1. Roll the dough into an oval shape and cut it from the center.
2. Take the bottom corners of one piece and pinch them together to form a pocket.
3. Fill the pocket with the aloo mixture and seal the edges tightly.

Potli Samosa:
1. Cut the dough into rectangular shapes.
2. Place the filling in the center, gather the edges, and seal tightly at the top to form a potli shape.

Samosa Roll:
1. Cut the dough into a triangular shape.
2. Place the filling on top, roll it up, and seal the edges.

Cooking-
1. Preheat the air fryer to 180°C.
2. Place the samosas in the air fryer and cook until golden brown. Smaller samosas may take less time.

Serving-

Serve the samosas with sliced onions, green chutney, tamarind chutney, and green chilies for a delicious snack.
