Hello folks!
So tonight for tea we had this super tasty (and easy!) Loaded baked potato casserole :) This makes a delicious side, and even better next day as left overs or a quick lunch on it’s own :) You could add whatever you like to this…whatever works on a baked potato, will work on this!
Everything I used will be listed below,

What I used- Serves 4 as a side

4 Baking potatoes - Washed
Olive Oil - 2 Tablespoons
Salt & Pepper - Just a sprinkling
8 Slices of streaky bacon - or bacon of your choice
Sour cream - 500ml (2.1 cups)
Grated cheese - 250g (3 cups)
Chopped chives - a small handful
